Banana-Oat-Blueberry Muffins: A Simple, Family-Friendly Bake

Banana-oat-blueberry muffins from a Chinese medicine perspective
From a Chinese medicine perspective, bananas on their own are considered cooling and damp-producing, which is why they’re not usually recommended in large amounts or eaten too frequently, particularly for those with sensitive digestion. When bananas are baked and combined with warming oats and spices such as cinnamon, their overall energetic quality becomes more balanced and easier to digest. Blueberries are considered cooling in nature and are linked with nourishing fluids and supporting the Blood.
A Note on Oats and Gluten
Oats are naturally gluten-free, however oat flour is often processed in facilities that also handle wheat, which means it can contain small amounts of gluten due to cross-contamination. For those who need to avoid gluten, choosing certified gluten-free oat flour is important.
Recipe for 12 Banana-Oat-Blueberry Muffins
Ingredients
2 eggs
3 ripe bananas (approx. 450 g)
200 g rolled oats
100 g spelt flour (or replace with more oats, more nuts)
50g of ground nuts (hazelnut, almonds, walnuts)
1 pinch of sea salt
½ tsp cinnamon
½ tsp vanilla essence
2 tsp baking powder
70g light-taste olive oil (for baking)
100g maple syrup or honey
90 ml milk or plant-based milk
100-150g of blueberries (can be frozen)
Method
- Preheat the oven to 180°C. Line a 12-hole muffin tray with paper liners.
- Place the oats in a blender or food processor and pulse until finely ground. Combine the ground oats with the flour, salt, cinnamon and baking powder.
- In a separate bowl, whisk together the oil, milk and eggs. Peel the bananas and mash them well with a fork until smooth. Stir in the mashed banana.
- Add the dry ingredients to the wet mixture and stir gently until just combined. Lastly, add the blueberries.
- Divide the batter evenly between the muffin cases. Bake for 18-20 minutes, or until golden and a skewer inserted into the centre comes out clean.
- Allow to cool slightly before removing from the tray.
- These banana-oat-blueberry muffins taste best when they are fresh. There is no limit to creative variations. Enjoy!!
